HEALTHY RECIPE: Salmon Piccata over Pasta

Our “Practical Chef” and fellow ALKie, Julie Posner shares one of her favorite healthy recipes. “I love Salmon, and I love lemon. This quick fancy ,but easy, recipe incorporates both. Crispy pan Sautéed Salmon tossed in a quick lemon butter sauce will give you a restaurant worthy dinner that is on the table in less than 30 minutes! Who wouldn’t love that? ( serves 4)

Salmon Piccata over Pasta

INGREDIENTS :

4 5 oz salmon filets

Kosher salt/ black pepper

1/4 tsp garlic powder

1 tablespoon of avocado or olive oil

4 tbspns COLD butter cut into 4 pats

1 tbsp flour

4-5 garlic cloves minced

1 cup chicken broth

2-3 tbspoons of capers + 2 tbspns brine

1/4 cup FRESH lemon juice

1 tbspoon minced fresh parsley

***2 1/2 cups cooked rice OR 8 oz of cooked pasta(* optional to make this a full meal)

DIRECTIONS

Season Salmon well with salt ,pepper and garlic powder after it has been removed from the refrigerator. 30 minutes prior to cooking.

Heat oil in a 12” inch cast iron skillet over medium heat until the oil shimmers. Add salmon flesh side down and cook till golden. DO NOT MOVE IT! ( approx 3 minutes).

Flip and continue to cook for another 2-3 minutes then transfer Salmon to a plate and tent with foil to keep warm.

Using a paper towel wad, and tongs carefully wipe clean remaining grease from the pan.

Add 1 pat butter and minced garlic to the pan and cook 30 seconds stirring. Add flour and whisk for one minute then slowly drizzle in the chicken broth as you whisk. Gently stir in capers, brine and lemon juice and bring to a simmer. Add additional remaining butter and parsley as you stir.

Place salmon on a platter and drizzle with piccata sauce, (optonal: over pasta or rice)reserving some sauce to pour over the pasta/ rice ,or to serve with the salmon.
