"My Favorite (Turkey) Bolognese:" Healthy Recipe by ALKie & Chef Juli Posner

I love a bolognese sauce. It is generally an Italian meat sauce made with ground beef and pork, often even a bit of pancetta. I have made this slow simmered authentic bolognese substituting ground turkey for the beef and pork and it doesn’t miss a beat, its just healthier for you!

If you love an Italian inspired dish, this sauce will be one of your favorites. Great for pasta, lasagna, or even over zucchini noodles. Make extra. It freezes beautifully.

Prep time: 12 minutes cook time: 2 hours 30 mins

Ingredients:

2 small carrots chopped

1 small white onion chopped

2 celery stalks chopped

3 cloves of garlic minced

2 tbspns olive oil

1 tbsp oregano

1 cup of dry white wine (optional)

8 ounces of pancetta

2 lbs ground turkey

1 29 ounce can crushed tomatoes

1 4oz can tomato paste

*2 cups chicken broth ( 3* cups if you’re not using wine)

1 cup whole milk

Salt, pepper, red pepper flakes (optional) to taste

Instructions:

In a food processor add the onions, carrots celery and garlic.

Pulse till well chopped BUT NOT MUSHY.

Remove vegetables, set aside, Add pancetta to processor till coursely chopped.

In a large sauce pan, warm olive oil, oregano and red pepper flakes on medium heat for about 30 seconds. Once you can smell the oregano, add in the ground turkey. Cook till well crumbled.

Add the veggies, pancetta and 1 cup wine (or 1 cup broth) to deglaze the pan. Add in the crushed tomatoes, tomato paste, and chicken broth.

Simmer on low, 2 hours for the flavors to blend. Add the milk the last 15 minutes of cooking

Season with salt and pepper.

Serve over Pasta or vegetables
